The person who sent it screwed up and left all 136 email recipients on CC. Sad thing is a couple of the jobs were ones I have not seen on my search yet. Guest Worldmaker Posted March 9, 2005 Report Share Posted March 9, 2005 Re: A Thread for Random Musings Key Lime Pie Crust: 4 1/2 ounces graham cracker crumbs 1 1/2 ounces sugar 1 1/2 fluid ounces butter, melted Filling: 15 fluid ounces sweetened condensed milk 6 egg yolks 6 fluid ounces key like juice 1 tbsp key lime zest Topping: 8 fluid ounces whipping cream 2 ounces powdered sugar 1. Mix the graham cracker crumbs and sugar in a bowl. 2. Ass the melted butter and combine until the mixture resembles wet sand. 3. Press the mixture into a 9-inch (229 cm) pie pan. 4. Mix the sweetened condensed milk with the egg yolks in a bowl. 5. Blend in the lime juice and zest. 6. Pour the mixture into the pan with the pie crust. 7. Bake in a preheated 350 degree oven for approximately 15 minutes, or until the filling is set. Be very, very careful not to overbake the pie. 8. Cover the pie and cool under refrigeration until the pie is at a temperature of 41 degrees or lower. 9. Whip the cream and powdered sugar together in a mixer on high speed until soft peaks appear. Be careful to not overmix the cream, or else you'll have sugared butter on your hands. 10. Pipe the cream onto the top of the pie and serve.
