It's almost certainly all pre-made and delivered to them by one of the big restaurant suppliers like Sysco. They just assemble the pieces -- cheesecake bread pudding warmed in a microwave, then a scoop of canned cherry pie filling, a scoop of cheap ice cream, and then a squirt of whipped cream and a drizzle of chocolate-flavored syrup-like substance.
