Teres major is an ultra-lean steak that's sometimes referred to as mock tender. Its similarity to the tenderloin makes it a great substitute for filet mignon. "Mock tenderloin" is from the chuck (I have also seen it packaged as "top clod" steak or roast). If you find it, it's a great cut of beef. Hey, I love bacon by itself when it's nice and crisp, but that gummy half-cooked kind that comes wrapped around filets is awful, and I don't like the way the grease from it flavors the beef and keeps it wet.
