I have used speck that was so lean it looked like dryed ham...no visible fat. The Hungarian style I believe is a bit fattier and comes with all varieties of paprika (sweet. hot, or smoked). If the one you are using has a nice bacon-like streak of fat it should do well for barding I would guess.

Well, all I told Sam that it would probably be in poor taste. As it was, I was already on the bride's bad list for wearing a chainmail tie to the wedding. Though it was more that the priest asked me if I had made it in prison. My reply was "Yep, that's where I got to be good friends with the groom."

Checked out what's becoming a new favorite at the Lion on Lorain tonight and tried their rendition of moules-frites. The mussels were very flavorful, steamed in a lovely beer broth. The potatoes, on the other hand, weren't really to my liking. They were billed as "jo-jo potatoes", but this was basically a potato quartered into wedges and tempura-fried. The batter just didn't have enough taste to it, yet really didn't soak up the broth very well either.
