Here's a version I was working on: Experimental Peanut Curry Sauce Vegetable broth (14 oz) Coconut Milk (14 oz) 1 cup peanut butter 1/2 cup red wine vinegar 4 tablespoons dark soy sauce 4 tablespoons oriental sesame oil 2 tablespoons dry sherry 3 tablespoons hot chile oil 1 teaspoon salt 4 tablespoons finely minced fresh ginger 2 large garlic cloves minced 4 tablespoons curry powder Combine broth & coconut milk in sauce pan, reduce to half Meanwhile combine remaining ingredients in separate bowl Combine the two and mix well. I tried reducing the mixture still further, but I believe the heat caused some separation to occur. It might be better to reduce the chicken/milk combo even further, or maybe start with less.
